Sunchokes
Topinambur, manchmal auch Sonnentod genannt, ist die Knollenwurzel einer sonnenblumenähnlichen Pflanze. Viele Landwirte betrachten die Pflanze als Unkräuter, da ihre beständige Natur die Kontrolle auf den Feldern erschwert.

Pflanzen wachsen ungefähr sechs bis zehn Fuß hoch. Reife Knollen sind wie kleine knorrige irische Kartoffeln. Die meisten sind drei vor vier (3 bis 4) Zoll lang und halb so dick. In der Nähe jedes Blütenstiels werden mehrere Knollen produziert.

👉 Sunchokes, native to North America, are knotted root vegetables that belong to the sunflower plant family and are in season from late fall through early spring. The root or tuber part of the flowering plant has thin papery skin with a creamy white interior. They are similar to potatoes in their taste and culinary preparations.

👉 The name Jerusalem artichoke is a misnomer: the plant is not related to the artichoke, though the sunchoke’s flavor may be reminiscent of the artichoke. The plant is not from Jerusalem: the name is probably derived from the Italian name for sunflower, girasole, which means turning to the sun.

👉 Sunchokes can often be substituted in recipes that call for potatoes and carrots. Chop them into 1-inch pieces with other root veggies, such as potatoes, beets, and sweet potatoes; drizzle with olive oil, thyme, and sea salt; and roast in the oven at 425°F for 25-35 minutes or until soft and golden.
